Homemade Cordon Bleu

Step 9

Heat the butter and vegetable oil together in an ovenproof pan over low heat. Add the cordon bleus, and cook them for about 5 minutes on each side. Continue cooking the cutlets in the oven for 10 minutes. 

This pan-to-oven method lets you cook the meat all the way through and melt the cheese completely without burning the breading.

 

Alternatively, you can opt to cook the cutlets for another 10 minutes in the pan on very low heat.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
