How often you need to sharpen your knife depends on how much you use it, but even a knife that is not being used will eventually lose its edge. As a rule of thumb, if your knife can't cut through a piece of paper easily, it is too dull. If you aren't confident using a whet stone, take your knives to be sharpened by a professional once or twice a year – it's not nearly as expensive as you might think, and the result is incomparable.
