Banana

Mash up half of a very ripe banana to replace one egg. One banana has roughly 422 mg of potassium. This is four times the recommended amount per day! So they're a great source for an essential micromineral and an easy way to save your recipe! While bananas offer a creamy texture and binding quality, they are flavorful and sweet, so we recommend using them for sweet recipes, such as pancakes, cakes, breads, etc. One more thing to keep in mind is that occasionally, you'll need to cook your dish longer than expected, or if it's a cake, it may not rise as much as you expected.
