Make the dough
You can use any pasta dough recipe for this method, but this is what we'd recommend: 2 cups flour, 1/4 tsp fine sea salt, 3 eggs, 2 tbsp milk, 1 1/2 tbsp olive oil.
First, combine your dry ingredients and pour onto a clean flat surface. Make a well in the middle. Then whisk together your wet ingredients and pour into the center of the well. Use your hands to knead the mixture together for about 5 minutes or so to form a smooth dough. Shape into a ball, cover with plastic wrap, and drape a towel over the dough. Let rest for 20 minutes.
