Mediterranean tomato red lentil soup

Mediterranean cuisine is accessible to anyone who wants to eat healthier. It includes common ingredients found all over the world, relies on everyday cooking methods and even allows for moderate red wine consumption. To reap the benefits of this nutritious lifestyle, it's also important to eat seasonally! Try this tasty recipe for Mediterranean-style tomato red lentil soup, filled with protein, fiber and plenty of fresh flavors.

Serves 4

  • 1 tbsp olive oil
  • 1/2 medium onion, peeled diced
  • 2-3 garlic cloves, peeled and minced
  • 1/2 tbsp ground cumin
  • 1/2 tsp ground coriander
  • 1 cup (210 g) dried red lentils
  • 3 1/2 cups (875 ml) vegetable broth
  • 10 oz. (285 g) canned diced tomatoes
  • 1 1/2 tbsp freshly squeezed lemon juice
  • Salt, pepper
  • Handful of fresh parsley, chopped, to garnish
  • 4 lemon slices, to garnish

Instructions

  1. Heat the olive oil over medium heat in a large saucepan. Add the onion and cook for about 5 min., stirring occasionally.
  2. Stir in the garlic and spices, and let cook for another minute until the garlic is nice and fragrant.
  3. Add the lentils, vegetable broth and diced tomatoes, stirring well to combine. 
  4. Bring the preparation to a boil, then lower the heat and let simmer for about 20 minutes, or until the lentils are soft and cooked through. If the soup becomes too thick, add a bit of water.
  5. Stir in the lemon juice, and season with salt and pepper to taste.
  6. Divide the soup evenly among 4 bowls, and garnish each with chopped parsley and a lemon slice.
