Buckwheat and corn flour waffle or pancake mix

Mix for making buckwheat waffles or pancakes
- 3 1/2 Cups Buckwheat flour
- 2 1/4 Cup corn flour (fine ground)
- 3/4 cup tapioca or potato starch
- 1/4 cup sweet sorghum flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
Meatballs

- 2 lbs burger meat. I use elk burger
- 1/2 cup corn flour
- 1 tablespoon Italian seasoning
- 1/2 teaspoon salt
- 1 teaspoon garlic powder
- 1/4 cup tomato sauce
- 1/4 cup minced onion
- 1 Tablespoon olive oil (I use this because our elk is not ground with any fat)

- 2 lbs burger meat (I use ground elk)
- 4 quarts of whole tomatoes- preferably home canned or whatever brand you like
- 1 can of Tomato Sauce same variety
- 1 small can of Tomato Paste + 1 can of water
- Salt and Pepper
- 2 T olive oil
- 1 Large Onion chopped
- 2 to 3 Cloves of Garlic minced
- 4 Whole Cloves
- 1 1/2 Tablespoon Oregano
- 1 Tablespoon Basil
- 1 teaspoon ground fennel
- 1 minced anchovy (optional)
