Deep Fried Lotus Root Meatballs

These lotus root meatballs are easy to make and so tasty
- 1) 350g extra lean ground pork;
- 2) 3 green onions finely chopped, 1.5 tsp ginger freshly minced, 1 tsp sugar, 2/3 tsp salt, 1 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp Yummy House soy sauce, 1/4 tsp chicken broth mix, 2 tbsp corn starch, 1/6 tsp thirteen scented spice or white pepper powder, 1.5 tbsp sesame oil, 2 tbsp water;
- 3) 450g lotus root;
- 4) ¼ cup all purpose flour, 2 tbsp water;
- 5) 3 cups corn oil.
Braised Pork Hock with Potatoes

This is a very tasty dish that goes well with rice or noodles
- 1) 1100g boneless pork hock, diced into 1-inch cubes and rinse under cold water;
- 2) 7 small potatoes 300g, peeled and rinsed;
- 3) 1 tbsp olive oil, 1 green onion cut into 2-inch long, 10g fresh ginger sliced, 1 anise star, 2 cloves, 1 tbsp anka sauce (can be substituted with cooking wine),
- 4) 1 tsp dark vinegar, 1.5 tsp sugar, 2 tbsp light soy sauce, 1 tbsp dark soy souce, 1tbsp Yummy House soy sauce (can be substituted with light soy sauce), 1/3 tsp salt;
- 5) 1 tbsp olive oil.
Potato Pancakes

Wash and peel the potatoes
- 1) 6 small potatoes (350 g);
- 2) 1 large egg, 1/3 cup water (80 g), ½ tsp salt, 1/6 tsp chicken broth mix, 1/6 tsp finely ground black pepper;
- 3) 1/3 cup unsifted all purpose flour (53 g), 2 tbsp finely chopped green onion;
- 4) 3×1 tbsp olive oil.

- Dough:
- 1) 1 cup + 2 tbsp lukewarm water or milk (270g), 1 tbsp sugar (14g), 1.5 tsp fast rising yeast;
- 2) 1 tbsp corn oil;
- 3) 2.5 cups unsifted all-purpose flour (400g), ¼ cup sugar (53g);
- 4) ¾ cup + 1 tbsp butter (185g);
- Egg custard filling:
- 5) 3 egg yolks, ½ cup sugar (105g), 6 tbsp milk (89g), 3 tbsp all-purpose flour (33g), 2 tbsp milk powder (10g), 2 tbsp butter (30g).
Pan Fried Sea Bream Fish

This dish can use either Sea bream or Sea bass, both have great flavour
- 1)2 medium size Sea bream or sea bass, you can ask the store to clean it for you and cut head off;
- Marinate ingredient:
- 2)1T minced garlic, 1T Chinese cooking wine, 3 tablespoon Kikkoman light soy sauce, 1/2t salt, 1t sugar, 1/3t five spice powder and 1t sesame oil;
- 3)1/2C all purpose flour;
- 4)3T corn oil.
- 1C=240ml, 1t=5ml and 1T=15 ml.
- Five-spice powder is a blend of ground spices used extensively in Chinese cooking. It usually consists of cloves, cinnamon, fennel seed, star anise, and Szechuan peppercorns. It can be found in the spice section of the grocery store.

- 1) 4 medium or large size tiger shrimps;
- 2) 1/8 tsp salt, 1/12 tsp white pepper powder, 1/4 tsp corn starch, 1/4 tsp sesame oil;
- 3) 1 extra large egg, 1/3 tsp salt, 150 ml lukewarm water;
- 4) ½ tsp sesame oil, ¼ tsp freshly minced green onion, ½ tsp light soy sauce (optional).
