- 1) 1 large taro root 500g;
- 2) 1 1/2 Chinese sausages cut into small pieces, 2 tbsp dried shrimp soaked in warm water then strained;
- 3) 1 tbsp olive oil, 1 tsp minced ginger, 3 tbsp finely chopped green onion;
- 4) 1 1/3 tsp salt, 1/2 tsp sugar, ¼ tsp chicken broth mix;
- 5) 1 1/3 cups rice flour (180g), 2 cups water (475g);
- 6) 3 tbsp olive oil.
Stir Fried Rice Noodles

- 1) 300g boneless center cut pork loin, trimmed of all outside fat, ½ tsp salt, 1 tbsp corn starch, 2 tbsp water, 2 tsp dark soy sauce;
- 2) 1 package (200g) thin dried rice noodles;
- 3) 10 dried Chinese mushrooms, 8g dried black fungus, 2 tbsp dried shrimp, soak in individual containers in warm water for 3 hours then rinse under cold water;
- 4) 1 small carrot 50g, peeled;
- 5) 400g baby bok choy;
- 6) 3 tbsp olive oil, 2 tbsp freshly chopped green onion, 1 tbsp freshly minced garlic, 1 tsp ginger cut into matchsticks;
- 7) 1.5 tbsp fash sauce, 1 tsp salt, 1.5tbsp light soy sauce, 1 tbsp Yummy House soy sauce (can be substituted with light soy sauce), 1/4 tsp chicken broth mix, 1/6 tsp thirteen scented spice powder or white pepper powder;
- 8) 2 tsp sesame oil.
Chinese Scallion Pancake

- Dough:
- 1) 2 cups unsifted all purpose flour (320 g);
- 2) 200 ml hot water (75-80C);
- 3) 1 tsp corn oil;
- Oil paste:
- 4) 1/3 cup corn oil, 1 green onion chopped to 2-inch length, 10g fresh ginger sliced, 1 anise star, 2 cloves, 1 small piece Chinese cinnamon;
- 5) 1/3 cup all purpose flour;
- Others:
- 6) 3×1/3 tsp salt, 3×1/8 tsp chicken broth mix, 3×1 tbsp finely chopped green onion;
- 7) 3×1 tbsp corn oil.
Spaghetti with Balsamic and Scallion Sauce

This cold noodle dish is ideal to serve at your summer picnic and backyard parties
- 1) Half package spaghetti (250g), 1 tsp salt, 1 tsp olive oil;
- 2) 1.5 tbsp white sesame seeds;
- Balsamic and scallion sauce:
- 3) 1 tbsp olive oil, 4 tbsp finely chopped green onion, 1.5 tsp minced ginger;
- 4) 1/2 tsp salt, 1.5 tbsp light soy sauce, 1.5 tbsp balsamic vinegar, 1.5 tsp honey, 1/6 tsp ground white pepper, 1 tsp sesame oil, 1 tbsp chili oil, 1/6 tsp chicken broth mix.
- Chili oil:
- 5) 2 green onion cut into 1-inch pieces, 10g fresh ginger sliced, 1 anise star, 2-3 cloves, ½ tsp cumin, 1 tbsp sesame seeds, ¼ cup chili pepper flakes, 3 tbsp paprika;
- 6) 1.5 cup corn oil or vegetable oil.
Red Wine Sauce Braised Beef Grilling Ribs

Add ingredient 2 into a Ziploc bag and mix well
- 1) Beef grilling ribs 1650g;
- 2) 1/2 cup all-purpose flour, 2 teaspoons salt, ½ teaspoon black pepper;
- 3) 3 tablespoons olive oil;
- 4) 1 purple onion 400g peeled and sliced, 3~4 cloves garlic crushed, 1 small ripe tomato chopped, 3 tablespoons ketchup;
- 5) Half bottle red wine (400ml), 1 teaspoon dry parsley, ½ teaspoon dry thyme, ½ teaspoon dry rosemary, 1 teaspoon sugar, 1.5 teaspoons salt, ½ cup water.

Soak dried Chinese mushrooms in warm water for 4 hours, rinse then cut into small pieces
- Leavened dough:
- 1) 3 cups unsifted all purpose flour (480g), 3 tsp baking powder;
- 2) 1&1/3 cups+4 tsp lukewarm water (340g), 1 tsp sugar, 2 tsp fast rising yeast, 1 tbsp all purpose flour;
- 3) 1 tsp corn oil;
- Filling:
- 4) 275g extra lean ground pork;
- 5) 8 small dried Chinese mushrooms;
- 6) 300g baby bok choy, rinsed;
- 7) 2 tsp cooking wine, 3 tbsp finely chopped green onion, 1 tsp freshly minced ginger, 3/4 tsp salt, ½ tsp sugar, 1 tbsp light soy sauce, 1 tbsp dark soy sauce, 1 tbsp Yummy House soy sauce, 1 tbsp corn starch, 1/4 tsp chicken broth mix, 1/6 tsp thirteen-scented-spice powder or ground white pepper, 1.5 tbsp sesame oil.
- Yield: 24 steamed buns.

- 3) 1 tablespoon vegetable oil;
- Apricot sauce (optional):
- 4) 1 large ripe apricot, peeled and cored, mash with 2 tablespoons water;
- 5) 2 teaspoons sugar.
Braised Chicken Wings with Oyster Sauce

- 1) Chicken wings mid-section or drumettes or 1150g;
- 2) 1 tbsp olive oil, 3-4 slices of fresh ginger, 1 green onion chopped into 2-inch lengths, 1 tbsp minced garlic;

- 1) ¾ cup unsifted all purpose flour (120g), 1.5 tbsp fine sugar (21g), 3 tbsp lard (45g) diced;
- 2) 1 extra large egg yolk, beaten with 2 tbsp water (30 g);
- 3) 1/3 cup unsifted cake & pastry flour (55g), 3 tbsp lard (45g).
- Filling:
- 4) 1 small purple yam peeled and diced (net weight 90g), 1 tbsp water.
- 5) 1 tbsp condensed milk, 3 tbsp sugar (42g), 1 cup milk (240g);
- 6) 2 extra large eggs, beaten.
