Moist delicious quick bread

  • 1 1/2 cup brown sugar, packed
  • 2/3 c. oil
  • 1 egg
  • 1 c sour milk1
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract
  • 2 1/2 cup flour
  • 1 1/2 cups diced fresh rhubarb
  • 1/2 cup chopped nuts (optional)
  • Then add topping below:
  • In bowl combine sugar, oil and egg beat.
  • In another bowl combine sour milk, salt, baking soda, and vanilla.
  • Add milk mixture to sugar mixture alternately with flour, beating well after each addition. Fold in rhubarb and nuts. Turn into well greased and floured loaf pan 8x4x3 " Sprinkle on topping:
  • Topping: combine 1/2 cup granulated sugar and 1 Tbsp. melted butter or 1/3 cup brown sugar and 1 tbsp. melted butter.
  • Bake 325 degrees oven for 40 to 45 Min. Being careful not to over bake.
