- 1/4 cup oil

- CAKE
- 1 cup unsalted butter softened to room temperature
- 1 1/4 cups granulated sugar
- 1/2 cup light brown sugar
- 4 large eggs at room temperature
- 1 Tbsp vanilla extract
- 3 cups all-purpose flour
- 1 Tbsp baking powder
- 1 cup buttermilk
- zest + juice of 3 medium lemons
- 1 1/2 cups blueberries fresh or non-thawed frozen
- 1 Tbsp all-purpose flour
- CREAM CHEESE FROSTING
- 8 ounces cream cheese softened to room temperature
- 1/2 cup unsalted butter softened to room temperature
- 3.5 cups confectioners' sugar
- 1 - 2 Tbsp heavy cream
- 1 tsp vanilla extract
Breakfast Pork Sausage Burritos

- ½ green bell pepper finely chopped
- 1 cup salsa
- 8 flour or wheat tortillas warm
- 4 eggs beaten
- 1 pkg pork sausage (alternative turkey sausage)
- 1 small onion finely chopped
- 8 slices of American Cheese
- 1 1/2 tsp vegetable oil
- Optional Fillings
- Mushrooms
- Fresh Spinach
- Bacon
- Ham
Chocolate Chip Cookie Dough Brownie Bombs

Let’s make some dough! In the bowl of a stand mixer, beat together the butter and sugars until creamy
- ¾ cup butter softened
- ¾ cup brown sugar
- ¼ cup white sugar
- 2 Tbsp milk
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- Pinch salt
- 2 cups miniature chocolate chips, divided
- 1 pkg fudge brownie mix, baked and cooled
- 1 pkg Candiquik or chocolate almond bark

- 2 lbs of Potatoes peeled and quartered
- 4 Tbs butter
- 1 egg slightly beaten
- 1/2 Tspn salt
- 1 Tbs cornstarch
- 1 packet of Sazón with Achiote (optional)
- Picadillo (ground beef prepared)
- Additional cornstarch to coat balls
- Vegetable oil for frying
SLOW-COOKER SALSA CHICKEN

Yummy with rice beans and sour cream
- 2 lbs. (32 oz.) chicken breasts, boneless and skinless
- 1 cup salsa homemade or purchased
- 1 cup petite diced canned tomatoes (choose low-sodium)
- 2 tbsp. taco seasoning
- 1 cup onions diced fine
- 1/2 cup celery diced fine
- 1/2 cup carrots, shredded (you can leave these out if you are concerned about the carbs)
- 3 tbsp. sour cream, reduced fat (can use regular sour cream if you like)
Farmer Casserole

- 1/2 c. sliced green onions

- Two 12-ounce c. evaporated milk
- 1/4 t. salt

- 3 lbs. Chicken Breast
- 1 lg Green Cabbage
- 1 med Sweet Onion
- 1 bag Shredded Carrots
- 1 nub of Fresh Ginger Root
- 5 cloves Fresh Garlic
- Soy Sauce
- Salt & Black Pepper to taste
- Vegetable Oil for Cooking
