- 2 1/4 cups All Purpose Flour
- 1 1/3 cups Sugar
- 3 tsp Baking Powder
- 1/2 tsp Salt
- 1/2 cup Shortening
- 1 cup low fat milk
- 1 tsp Vanilla
- 2 eggs
Chocolate Frosting

- 1 cup butter (softened)
- 2 tbsp light corn syrup
- 4 cups powdered sugar
- 2 squares (1 oz each) unsweetened chocolate melted
Brownies

Preheat oven to 350 degrees F (175 degrees C)
- 1/2 cup butter
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- Frosting:
- 3 tablespoons butter, softened
- 3 tablespoons unsweetened cocoa powder
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- 1 cup confectioners' sugar
Corn Pudding

Preheat oven to 400 Degrees F (200 degrees C)
- 5 eggs
- 1/3 cup butter, melted
- 1/4 cup white sugar
- 1/2 cup milk
- 4 tablespoons cornstarch
- 1 (15.25 ounce) can whole kernel corn
- 2 (14.75 ounce) cans cream-style corn
Key Lime Pie

Combine 1 1/2 cups sugar, cornstarch and salt in a 2-quart saucepan
- 2 cups sugar divided
- 1/4 cup plus 2 tbsp cornstarch
- 1/4 tsp salt
- 1/2 cup fresh key lime juice
- 1/2 cup cold water
- 3 eggs separated
- 2 tbsp butter
- 1 and 1/2 cups boiling water
- 1 tsp grated fresh lime peel
- green food coloring (optional)
- 1/4 tsp cream of tartar
- 9 in pie crust
Bread Pear Bread Pudding w/ Dulce de Leche

In a large bowl, whisk together the eggs, cream, brown sugar, dulce de leche and vanilla
- 8 large eggs
- 1 L half & half or heavy cream
- 1/2 cup packed brown sugar
- 1 cup dulce de leche or pure maple syrup
- 1 tsp. vanilla
- 1 large day-or-two-old baguette or other firm loaf, cubed or torn into chunks
- 1 Tbsp. canola oil 1 Tbsp. butter 2 large ripe but firm pears or apples, cored and sliced 2-3 Tbsp. sugar
Pecan Chocolate Chunk Icebox Cookies

In a large bowl, beat the butter and sugars with an electric mixer until well combined
- 1/3 cup butter, softened
- 1/3 cup sugar
- 1/3 cup packed brown sugar
- 1 large egg
- 2 tsp vanilla
- 1 1/4 cups flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 cup chopped dark or semi-sweet chocolate, or chocolate chips
- 1/2 cup chopped pecans, walnuts or peanuts
Key Lime Pie Smoothie

Combine everything but the graham crackers in a blender and process until smooth
- 1 cup Silk Unsweetened Vanilla almondmilk
- 1 frozen banana
- 1/2 cup baby spinach leaves
- 1 Tbsp lime juice
- Zest of 1 lime
- 1/2 tsp vanilla extract
- 1 Medjool date, pitted
- 1 Tbsp crushed graham crackers
Loaded Baked Potato Salad

Wash and cut the potatoes into bite-sized pieces
- 8 medium Russet Potatoes
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 package of bacon, cooked and crumbled
- 1 small onion, chopped
- Chives, to taste
- 1 1/2 cups shredded cheddar cheese
- Salt and Pepper to taste
Potato Pancakes

- 8 Yukon gold potatoes
- 2 to 3 tablespoons white wine vinegar
- 1 clove garlic, smashed
- Kosher salt
- 2 eggs
