Fried wonton puffs

"If you like jalapeno poppers, you will love these fried wontons stuffed with cheese and jalapeno!"
- Directions
- In a medium bowl, mix the cream cheese, Monterey Jack cheese, jalapeno peppers, garlic and green onions.
- Fill wonton wrappers with approximately 1 teaspoon cream cheese mixture each. Fold wrappers into triangles and press the edges with a moistened fork to seal.
- In a large, deep skillet, heat the oil over medium high heat. Drop 4 wontons at a time into the oil and quickly fry, turning once. Remove when golden brown and drain on paper towels.

- 6-8 corn tortillas (enchilada size)
- 1 pre-cooked plain rotisserie chicken, shredded
- 1 cup sweet corn
- 4 cups shredded Mexican blend cheese, divided in half
- 3 tablespoons butter
- 3 tablespoons all purpose flour
- 1-1/4 cups chicken broth
- 1 – 10oz can cream of chicken soup
- 1 cup sour cream
- 1 – 4oz can chopped green chiles
- ¼ teaspoon ground black pepper
- ¼ teaspoon sea salt
Oatmeal Applesauce Muffins

Preheat the oven to 400 degrees
- 1 cup old fashioned rolled oats (not instant)
- 1 cup nonfat milk
- 1 cup whole wheat flour
- 1/2 cup brown sugar
- 1/2 cup unsweetened applesauce
- 2 egg whites (I’ve used EggBeaters)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1 tsp sugar
- raisins or nuts (optional but I haven’t used either yet)
Recipe for Roasted Green Beans with Mushrooms, Balsamic, and Parmesan

Preheat oven to 450F/230C
- 8 oz. mushrooms, sliced in 1/2 inch slices (I used brown crimini mushrooms, but any mushrooms will work)
- 1 lb. fresh green beans, preferably thin French style beans
- 1 1/2 T olive oil
- 1 T balsamic vinegar
- salt and fresh ground black pepper to taste
- 2 T finely grated parmesan cheese
Hamburger Stroganoff

Saute onion and garlic in butter
- 1/2 c. minced onion
- 1 clove garlic
- 1 lb ground beef
- 2 Tbs flour
- 1 tsp salt
- 1/4 tsp pepper
- 1 – 8 oz can sliced mushrooms, optional
- 1 can cream of chicken soup
- 1 c. sour cream
- 1/4 c. butter

Easy Corn Dogs (Mini style!)

Mix the dry ingredients. Add oil to a frying pan, about 2 inches, and heat on medium/high heat
- A pack of 8 hot dogs, cut each one in thirds (I get organic all beef)
- 1/2 cup yellow cornmeal
- 1/2 cup all-purpose flour
- a dash of salt and pepper
- 1 8 cup white sugar
- 2 tsp baking powder
- 1 egg
- 1/2 cup milk
- oil, for frying – Vegetable or coconut

Broccoli Salad with Walnuts

Prepare and toss together salad ingredients
- 5 cups broccoli florets,uncooked
- ½ medium red onion, thinly sliced
- ½ cup roasted, unsalted sunflower seeds*
- 8 slices bacon, cooked and crumbled
- 1 cup old cheddar cheese, grated
- DRESSING:
- 1 cup Hellmans Light Mayonnaise
- 4 Tbsp. white sugar
- 3 Tbsp. white wine vinegar
- *OPTIONS:
- In place of or in addition to the sunflower seeds you may use any of the following:
- raisins, dried cranberries, (delicious!), chopped dried apricots, banana chips, or most any dried fruit; walnuts, pecans, almonds, peanuts and any other type of seed.

- 1 tablespoon rice wine vinegar

- 2 tablespoons plus 2 teaspoons vegetable oil
- 1 (2-inch) piece fresh ginger, peeled and minced (about 1 tablespoon)
- 2 cloves garlic, minced (about 1 tablespoon)
- 1/4 teaspoon dried chile flakes
- 1 scallion, green and white parts, sliced
- 8 to 12 ounces boneless, skinless chicken thighs (about 4 thighs, or 2 thighs and 2 legs), cut into small cubes or strips
Cheezy Vegetable Bake

irections Layer everything into a foil-lined or sprayed 9×13 pan in the order listed
- 2 Potatoes, Diced (dice them small so they cook properly. Or, mix and match rice, quinoa, lentils, bulger, barley, etc rather than using all potatoes )
- 1/2 c Carrots, Diced
- 1/2 c Broccoli/Cauliflower Mixture (or any other veggies you want to use up; zucchini, Brussels sprouts, turnips, parsnips, squash. Throw it in)
- 1 Can Soup (any vegetable soup, Cream of Mushroom, noodle soup, whatever you have)
- 1/2 c Water
- 1 Tbsp Mrs. Dash Seasoning Blend (or your favorite. Maybe 21 Salute Seasoning)
- 1/3 c Nutritional Yeast (Nooch), Sprinkled (this will not make or break the recipe if you don’t have it, but then use other cheese/cheeze)
