- 1/3 cup buckwheat flour
- 1 1/4 cup flour
- 1 packet of yeast
- 1 scant cup sour cream
- 1 cup of milk
- honey
- 2 eggs
- salt

Step 1
Mix the two types of flour with yeast and pinch of salt. In a saucepan pour sour cream, milk, and 2 egg yolks (reserve whites). Heat the mixture over low heat for 5 minutes without boiling. Pour the warm mixture to the flour and stir until a smooth paste. Let the dough rest for 1 hour at room temperature.
Step 2
Beat the 2 egg whites and fold gently into the resting dough. Let the dough rest again for 1 hour at room temperature. Your blini batter is ready Cook your blinis like crepes.
