Ingredients

  • 1/4 cup olive oil
  • 3 green bell peppers
  • 2 red bell pepper
  • 1 yellow sweet bell pepper
  • 1 orange bell pepper
  • 2 large onions
  • 3 cloves minced garlic
  • 1 teaspoon garlic salt
  • 3 Tablespoons red wine vinegar
  • salt & pepper to taste
  • 2 lbs sweet Italian sausage (or 1lb sweet, 1 lb hot)

Step 1

Slice peppers and onions

Step 2

Heat oil in large skillet, add onions, peppers, garlic, and vinegar. Sautee 10 minutes, then cover and cook until tender. Add salt, pepper, and garlic salt.

Step 3

In another skillet, brown sausages in a bit of olive oil. Cover and cook until heated through.

Step 4

Remove sausages from skillet and slice, add to peppers and onions. Add any drippings from sausage skillet as well.

Step 5

Cook all together on low heat for 10-15 minutes to combine flavors.
