3-Ingredient Brunch Recipes to Get You In and Out of the Kitchen

Flourless Banana Pancakes

Pancakes are a brunch must! But skip the usual fussy preparation, and make banana pancakes instead. All you need is 1 medium ripe banana and 2 large eggs. Mash the banana in a small mixing bowl until you get a smooth consistency with no big lumps. Whisk the eggs together separately, then add them to the mashed banana, and stir well to combine. Add 1/8 teaspoon ground cinnamon for extra flavor and optionally, 1/4 teaspoon baking powder if you want them to rise a bit more. Stir everything well until combined.

Ladle the batter into a skillet coated with cooking spray on medium heat, 2 tablespoons at a time. Let set for 30-60 seconds, then flip with a spatula for one minute or less. Repeat until your banana "batter" is all used up. Serve with your choice of maple syrup, almond butter, honey, fresh berries, fruit jam, etc.

  7. Slice and serve!
