Quarantine got you missing your daily Starbucks runs? Us, too. It's not just the coffee we miss, either. It's the pastries, the hot breakfast sandwiches, those convenient little protein boxes. But one of the menu items we miss the most is their moist, delicious carrot cake. Made with grated carrots, dried fruit and nuts, it's sweet, crunchy and perfectly spiced—and well, life just isn't the same without it. For better or for worse, we found ourselves with a lot more time on our hands, so we attempted to recreate the famous Starbucks carrot cake at home.
