Dig into Fall with this Squash & Camembert Salad

Just because it's fall doesn't mean you have to give up salads. Try this one with roasted squash and creamy camembert for a satisfying vegetarian meal or side.

Ingredients for 4 people

For the salad

  • 1 red kuri squash (or acorn squash, butternut squash, sweet potato, buttercup squash, etc.)
  • 3 slices of sourdough bread
  • 1/2 wheel of camembert
  • 2 handfuls of pumpkin seeds
  • Salt
  • 1 tbsp olive oil
  • Thyme

For the vinaigrette

  • 3 tbsp olive oil
  • 1 tbsp vinegar
  • Fine sea salt
  • Freshly cracked black pepper

Three Cheese Baguette

You'll drool over this 3 cheese, bacon-wrapped baguette.

 

INGREDIENTS

  • Blue cheese
  • Cheddar cheese
  • Mozarella
  • 1 baguette
  • Sun-dried tomatoes
  • Bacon

METHOD

  1. Cut your cheeses into thin slices
  2. Slice baguette down the middle (like a sandwich)
  3. Layer cheddar, blue, and mozarella cheese inside the bread
  4. Top with sun-dried tomatoes
  5. Close baguette and wrap with bacon strips
  6. Put in oven and bake for 20 minutes at 350 degrees
  7. Slice and serve!
