Savory Smoked Salmon Lasagna

Heat a pan over medium-low heat with the olive oil. Add the onion and sauté for 2 min. Add the smoked salmon (5 oz.) and cook for 1 min. until it turns a pale rose color.
Remove from heat and add this mixture to the bechamel. Stir well to combine, then put the lid back on and set aside.
Place the mozzarella cubes in a fine-mesh sieve over a bowl and let drain.
