The Crispy Guide to Homemade KFC Chicken

Homemade KFC potatoes and gravy

KFC's mashed potatoes and gravy are always a good idea. You can even dunk your crispy homemade original chicken pieces in the iconic side. 

Ingredients for 6 servings

For the mashed potatoes

  • 2 lbs russet potatoes, peeled and cubed
  • 3/4 tbsp salt
  • 4 tbsp unsalted butter, cut into cubes
  • 1/3 cup heavy cream
  • 1/2 cup whole milk
  • Freshly cracked black pepper
  • Salt, to to taste

For the gravy

  • 2 1/4 cups boiling chicken stock
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 1/2 tsp garlic powder
  • 1/4 tsp freshly cracked black pepper
  • Salt, to taste

Instructions

  1. To make the mashed potatoes: Add the potatoes and salt to a large pot, then add water until the potatoes are submerged by 2 inches.
  2. Bring to a boil and cook for 15 min. until the potatoes are soft and fork tender.
  3. Drain and let rest for a few min. Then transfer to a serving bowl and set aside.
  4. Melt the butter in the same saucepan over medium high heat.
  5. Stir in the heavy cream and milk, then bring to a gentle simmer. Remove from the heat.
  6. Purée the potatoes with a potato masher. Add the hot butter/cream/milk mixture, the garlic powder, pepper and salt to taste.
  7. Stir gently to combine.
  8. Taste and adjust the seasonings, if necessary.
  9. Set aside and keep warm.
  10. To make the gravy: In a small saucepan over medium heat, melt the butter.
  11. Whisk in the flour, garlic powder and pepper to make a roux.
  12. Gradually pour in half of the hot chicken stock, whisking constantly.
  13. Once it takes on a thickened texture, pour in the remaining stock and stir well to incorporate.
  14. Continue stirring for about a minute or two longer, until you get a gravy-like consistency.
  15. Taste and adjust the seasonings, if necessary. Don't add too much salt, as the stock is likely already seasoned.
  16. Serve over the mashed potatoes.
