Sauteed Potato and Watercress

Sauteed potatoes are a very easy way to use up pre-cooked potatoes, and this recipe—which adds in watercress—brings in heaps of healthy vitamins and minerals. Having pre-cooked potatoes halves your cooking time, as they will only need to be heated through. Serve as a beautifully balanced light lunch or as a side with dinner.
