Thai Red Curry with Chicken

Thai red curry paste is super versatile, and can spice up the blandest of dishes! Mix up a spicy, fragrant marinade with this recipe using the most simple ingredients. Serve with steamed rice and top with sliced red and green chili - just make sure there's a large jug of water on the table!

Ingredients (for 4 people):

  • 2 tbsp red curry paste
  • 2 tbsp vegetable oil
  • 2 tbsp coconut cream
  • 10 oz. chicken breast (sliced into chunks)
  • 1/2 onion (chopped)

Instructions:

  • Preheat oven to 400°F.
  • In a small bowl, mix the curry paste, vegetable oil, and coconut cream.
  • Add the chicken, and mix so that the sauce covers all of the chicken.
  • Put a drop of oil in a skillet, and warm over medium-high heat. Add the chopped onion and saute.
  • Add the chicken to the onion, and fry until the sauce starts to bubble in the pan.
  • Remove from the heat, pair with steamed rice, and top off with a handful of chopped cilantro.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
