Sweet and Spicy Chicken Skewers

Perfect for Memorial Day or the Fourth of July, these chicken skewers are juicy and pack a real punch. A celebration of citrus flavors, they're sweet glaze will transport you to an exotic place where it's summer all all year round.

Ingredients (for 4 people):

  • 1 lb. chicken breast (cut into chunks)
  • 3 tbsp apricot jam
  • 1 tbsp lemon extract
  • 1 tbsp orange extract
  • 1/2 tsp red chili flakes
  • Skewers

Instructions:

  1. Put the chicken breast in a bowl. 
  2. In a seperate bowl, using a fork, whisk the apricot jam, orange and lemon extracts, and red chili flakes. Pour over the chicken breast.
  3. Using your hands, mix the marinade into the chicken so all pieces are evenly covered.
  4. Wash hands, and refrigerate the chicken for an hour.
  5. Heat the grill, or if you're barbecuing, light the charcoal and get the grill ready.
  6. Once the chicken is well marinated, place 6-8 cubes onto each skewer.
  7. Place the skewers onto the grill, and cook for 5 min. Flip, and cook for another 5 min.
  8. Transfer to a plate and enjoy!

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
