Nettle Pudding

Okay, so nettle pudding isn't super common these days, but some people till experiment with its preparation as it's known to be nutritious ... and actually sort of delicious!

Most of us know it in its pesky weed form, but some culinary enthusiasts and historians think it's worth trying the pudding out, as a way of connecting with the culinary traditions of our ancestors.

Records of nettles being consumed go as far back as the ancient Greek and Roman periods. It's said that the Romans appreciated the nutritional properties of nettles, and included them in dishes such as soups and puddings.

During the Middle Ages, nettle pudding was popular in Britain, where nettles were gathered and mixed with eggs, flours and milk to create the dish. As time progressed, the pudding became less popular, however recipes and references to the dessert can still be found in traditional cookbooks.
