This Lebanese salad is not only fresh, but super unique and full of original flavor thanks to its mix of spices. Yum!
Ingredients (for 4 people):
3 large tomatoes
1 romaine lettuce
1 cucumber
1 scallion
1/2 red bell bell pepper
2 rounds of pita bread
6 radishes
4 tbsp chopped fresh parsley
4 tbsp fresh mint (chopped)
2 tbsp fresh cilantro (chopped)
Juice of 1 lemon
2 tbsp sumac
1 dash of olive oil
Salt and pepper (for seasoning)
Instructions:
Wash the vegetables. Cut the tomatoes, cucumber, bell bell pepper and radishes into cubes or small pieces. Set aside in a bowl.
Wash the lettuce and dry it well. Cut into strips, add to the other vegetables, and toss.
Chop the scallion and finely chop the herbs. Add to the salad and mix.
Cut the rounds of pita bread into cubes or strips, depending on what you'd rather. You can either toast the pieces in the oven grill for 10 mins. or fry them in a skillet with a 1 tsp of oil until they're crispy.
In a small bowl, mix the lemon juice with the sumac and a dash of olive oil to make the dressing. Pour the dressing over the salad, mix again, and sprinkle the pita bread pieces over the top.
