Burger She Wrote’s Wagyu Double SmashBurger

Smashburgers have risen to fame across the country in recent years, and the crowds at Coachella proved their popularity. This simple method of achieving a crispy, yet juicy burger patty is the perfect summer staple that the whole family can enjoy. Ingredients (for 2 burgers):

Patties

  • 1 lb Wagyu beef, divided into 4 equal portions
  • Salt and pepper to taste
  • 4 slices American cheese
  • 2 King's Hawaiian hamburger buns
  • Clarified butter or vegetable oil for cooking 

Toppings

  • Ketchup
  • Raw onions, diced
  • Yellow mustard
  • Pickles
  • Mayo
  • Grilled onions (optional, for Oklahoma-style)

Instructions:

  1. Preheat a griddle or large skillet over medium-high heat. Make sure it's hot before you start cooking the patties.
  2. Season each portion of Wagyu beef with salt and pepper. Place a portion of beef onto the hot griddle or skillet. Use a large spatula to press down firmly on the beef to smash it into a thin patty. The edges should start to get crispy. Repeat with the remaining portions of beef.
  3. Cook the patties for about 2-3 min. on each side, or until they are cooked to your desired level of doneness. During the last minute of cooking, place a slice of American cheese on each patty to allow it to melt.
  4. While the patties are cooking, lightly toast the King's Hawaiian hamburger buns on the griddle or skillet until they are golden brown and slightly crispy.
  5. Place two patties with melted cheese on the bottom half of each toasted bun. Add desired toppings: ketchup, raw onions, yellow mustard, pickles, and mayo. If you want to make it Oklahoma-style, add a generous portion of grilled onions on top of the toppings.
  6. Place the top half of each bun over the toppings to complete the burgers. Serve immediately while they're hot and enjoy the juicy, crispy-edged smashburgers!
