New School’s Quality Grilled Cheese

New School specializes in elevated grilled cheese sandwiches filled with high-quality American cheese and unconventional fillings like brisket or balsamic glazed mushrooms. New School upped the ante this year by partnering with Campo Grande, a premium Spanish pork supplier that have dubbed themselves the “wagyu of pork.” Here’s how to make their protein packed, limited-edition Coachella menu item at home!

Ingredients (for 2 sandwiches):

  • 4 slices of bread (your choice of bread, such as white or sourdough)
  • 4 slices of American cheese
  • 2 oz coppa (Italian dry-cured pork shoulder)
  • 2 oz salchichón (Spanish dry-cured sausage), thinly sliced
  • 1 cup cooked, crispy French fries
  • Butter or margarine, softened

Instructions:

  1. Slice the coppa thinly. Heat a skillet over medium heat. Add the thinly sliced salchichón to the skillet and cook for 1-2 min. on each side, or until it becomes lightly crisp. Remove from the skillet and set aside.
  2. Place two slices of bread on a clean surface. Layer each slice with 1 slice of American cheese, followed by half of the coppa and cooked salchichón slices, and then half of the French fries. Top each sandwich with another slice of American cheese and cover with the remaining bread slices.
  3. Spread a thin layer of softened butter or margarine on the outsides of each sandwich.
  4. Heat a skillet or griddle over medium heat. Once hot, place the sandwiches onto the skillet or griddle. Cook for 3-4 min. on each side, or until the bread is golden brown and crispy, and the cheese is melted.
  5. Once the sandwiches are cooked, remove them from the skillet or griddle. Allow them to cool for a minute or two before slicing them in half. Serve immediately.
