Ingredients (for 1 loaf):
1 ¾ cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
½ tsp nutmeg
½ tsp cloves
½ tsp salt
1 cup pumpkin purée
1 cup granulated sugar
½ cup brown sugar, packed
½ cup vegetable oil
2 large eggs
¼ cup milk or buttermilk
1 tsp vanilla extract
Instructions:
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
In a large bowl, mix the pumpkin purée, granulated sugar, brown sugar, and oil until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the milk and vanilla extract.
Gradually add the dry ingredients to the wet mixture, stirring just until combined. Avoid overmixing to keep the bread tender.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake for 55-65 min., or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 min., then transfer it to a wire rack to cool completely before slicing.
