Cheesecake Jars

When you’re craving cheesecake but don’t want to bake a whole one, this creamy, no-bake cheesecake in a jar is the perfect solution. With a buttery graham cracker base, cream cheese filling, and a topping of fresh fruit, it’s a delightful, perfectly portioned treat for one. Whip one up anytime a sweet craving strikes! 

Ingredients (serves 1):

  • 2 tbsp graham cracker crumbs
  • 1 tsp melted butter
  • 2 oz cream cheese, softened
  • 1 1/2 tbsp powdered sugar
  • 1 tbsp plain Greek yogurt (or sour cream)
  • 1/4 tsp vanilla extract
  • 2 tbsp fresh fruit or fruit compote (strawberries, blueberries, or your favorite fruit)

Instructions:

  1. In a small bowl, mix the graham cracker crumbs with the melted butter until evenly coated.
  2. Press the mixture firmly into the bottom of a small jar or glass to form the crust.
  3. In another bowl, beat the cream cheese, powdered sugar, Greek yogurt, and vanilla extract until smooth and creamy. Use a spoon or spatula to avoid over-whipping.
  4. Spoon the cream cheese mixture over the graham cracker crust, smoothing the top with the back of a spoon.
  5. Top the cheesecake layer with fresh fruit or a dollop of fruit compote.
  6. Refrigerate the jar for at least 20 min. to set, or enjoy immediately if you can’t wait!

Ingredients

  • 8 oz. cream cheese
  • ½ cup powdered sugar
  • 2 lemons
  • Ginger cookies (such as Speculoos) or graham crackers

Method

  1. Place cream cheese (e.g. Philadelphia) in a mixing bowl.
  2. Add powdered sugar.
  3. Beat ingredients together.
  4. Cut a lemon in half and squeeze the juice of one half into the mixture.
  5. Mix well.
  6. Cut the top and bottom off of a lemon and hollow.
  7. Fill the hollowed-out lemon with the whipped mixture.
