Honey-Glazed Carrots

Ingredients (serves 4):

  • 1 lb carrots, peeled and cut into sticks
  • 2 tbsp butter
  • 2 tbsp honey
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste
  • Optional garnish: chopped fresh parsley

Instructions:

  1. Bring a pot of salted water to a boil. Add the carrot sticks and cook for about 5-7 minutes until tender but still firm. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Stir in the honey and lemon juice, and let the mixture simmer for about 2 minutes.
  3. Add the cooked carrots to the skillet, tossing to coat them evenly with the honey glaze. Cook for an additional 3-5 minutes, stirring occasionally, until the carrots are well glazed and heated through.
  4. Season with salt and pepper to taste. Transfer the glazed carrots to a serving dish and garnish with chopped fresh parsley if desired.
