Ingredients (serves 4):
1 lb carrots, peeled and cut into sticks
2 tbsp butter
2 tbsp honey
1 tbsp fresh lemon juice
Salt and pepper to taste
Optional garnish: chopped fresh parsley
Instructions:
Bring a pot of salted water to a boil. Add the carrot sticks and cook for about 5-7 minutes until tender but still firm. Drain and set aside.
In a large skillet, melt the butter over medium heat. Stir in the honey and lemon juice, and let the mixture simmer for about 2 minutes.
Add the cooked carrots to the skillet, tossing to coat them evenly with the honey glaze. Cook for an additional 3-5 minutes, stirring occasionally, until the carrots are well glazed and heated through.
Season with salt and pepper to taste. Transfer the glazed carrots to a serving dish and garnish with chopped fresh parsley if desired.
