Another dish to turn unwanted spinach into a favorite meal. In general, quiche is always a good choice to make vegetables tasty for many. Broccoli or kohlrabi can also be used here.
Ingredients (serve 4):
1 1/4 cups flour
3 tbsp water
7 tbsp butter
1 pinch salt
3 slices bacon (or vegetarian alternative)
2 onions
1 clove of garlic
7 oz frozen spinach
4 sun-dried tomatoes
3 eggs
2/3 cup sour cream
1/2 cup fresh goat cheese
3 tbsp Parmesan cheese
Salt, pepper, and nutmeg for seasoning
Instructions:
Put the flour and salt in a bowl, make a well in the center, and add the cold water. Add the butter in cubes and knead everything into a dough. Wrap the dough in plastic wrap and let it rest briefly.
Preheat the oven to 350°F.
Dice the bacon (or vegetarian alternative). Peel and finely chop the onions and garlic clove. Sauté them in a bit of fat until translucent. Add the spinach and diced tomatoes, then remove the pan from the heat.
Whisk the eggs, sour cream, and goat cheese together, and season with salt, nutmeg, and pepper. Add this mixture to the pan and combine with the spinach mixture.
Roll out the dough on a floured surface, place it in a greased dish, and press it lightly.
Spread the goat cheese and spinach mixture evenly over the dough. If desired, place some slices of goat cheese on top, but it also tastes great without this final touch. Bake for about 30 minutes and let it cool slightly before cutting.
