Red Cabbage Steaks

A wonderful red cabbage variant that turns the vegetable into crunchy steaks. Mashed potatoes are a perfect side dish. The toppings include hazelnuts and feta, which can be complemented with goat cheese or pomegranate seeds, according to taste.


Ingredients (serve 4):

  • 1 red cabbage
  • 3 cloves of garlic
  • 1/2 cup olive oil
  • 1 tsp salt
  • 2/3 cup feta cheese
  • 2 tbsp hazelnuts
  • 1 tbsp chives
  • 4 tbsp maple syrup
  • 1 tsp thyme
  • 1 tsp chili flakes

Instructions:

  1. Preheat the oven to 350°F.
  2. Wash the cabbage and cut it into slices. Peel and press the garlic cloves.
  3. Place the red cabbage slices on a baking sheet lined with parchment paper.
  4. In a small bowl, mix the olive oil with the salt and garlic, and brush the red cabbage with this mixture.
  5. Bake the marinated red cabbage steaks for about 20 minutes. Then crumble feta cheese and chopped hazelnuts over the top and bake for an additional 10 to 15 minutes.
  6. Serve the red cabbage steaks sprinkled with chopped chives, maple syrup, thyme, and chili flakes.
