This delightful twist brings together nutritious vegetables and a beloved childhood favorite. Feel free to substitute broccoli with other vegetables to customize this dish to your liking.
Ingredients (for 8 pancakes):
2 cups milk
2 cups flour
3 eggs
2 tbsp sunflower oil
1 pinch salt
6 cups steamed broccoli
4 cups grated cheese
Salt and pepper to taste
Instructions:
In a bowl, whisk together the milk and eggs until well combined.
Gradually add the flour while constantly stirring to avoid lumps.
Add the oil and a pinch of salt, mix again, and let the batter rest, covered, for 30 minutes.
Heat a little oil in a pan. When the oil is very hot, pour in a ladle of batter and spread it out with a stick or spatula.
Cook for two minutes, then carefully flip the pancake. Repeat the process and stack the pancakes on a plate.
Cut the broccoli into small florets and steam for 10 minutes.
Mix the broccoli with the grated cheese and distribute it on the pancakes. Depending on your preference, you can fold the pancakes in the middle or roll them up.
Sprinkle some cheese on top and microwave for 30 seconds.
