The Italian potato dumplings can be combined with many different vegetables. An unusual combination is this dish with beetroot and mozzarella sauce. Garnished with some Parmesan and parsley, it's a vibrant, eye-catching dish.
Ingredients (serve 4):
2 onions
2 beetroots
3 mozzarella balls
1.5 lb fresh gnocchi (from the refrigerated section)
Salt, pepper, and paprika powder for seasoning
Instructions:
Peel and finely chop the onions. Peel and grate the beetroots (it's best to wear gloves).
Sauté the onions in a pan until translucent. Add the grated beetroot to the pan and sauté with the onions for a few minutes.
Add the gnocchi and briefly fry everything together. Dice the mozzarella and add it to the pan as well. Stir well until the cheese melts and becomes stringy. Finally, season with salt, pepper, and paprika powder to taste.
