A true pasta classic with a twist. Zoodles are noodles made from zucchini and turn vegetables into a wonderful new favorite dish.
Ingredients (serve 4):
1 onion
1 clove of garlic
1 carrot
1 celery stalk
1/2 lb ground beef or vegan alternative
2/3 cup tomato purée
2.5 tbsp tomato paste
Dried oregano
2 zucchini
Parmesan
Salt and pepper for seasoning
Instructions:
Peel and finely chop the onion and garlic. Peel the carrot, wash the celery, and cut both into fine cubes.
Sauté the onion and garlic in a pan with olive oil. Gradually add the ground meat, carrot, and celery, and briefly sauté everything. Add the tomato purée and tomato paste and season with salt, pepper, and oregano.
Let the sauce simmer on low heat for half an hour. Meanwhile, prepare the zoodles and cook them in boiling salted water for 3 minutes.
Arrange the zoodles on a plate, pour over the Bolognese sauce, and garnish with freshly grated Parmesan as desired.
