Zucchini Cake

Discover the surprising versatility of zucchini with this delicious chocolate cake. Not only does it make the cake incredibly moist and flavorful, but it also means you're sneaking in some veggies while indulging in a sweet treat. Plus, thanks to the zucchini, there's no need for eggs in this recipe!


Ingredients (serve 2-3):

  • 1 1/2 cups zucchini
  • 7 oz dark chocolate
  • 1/2 cup margarine
  • 2 1/2 cups flour
  • 2 tsp baking powder
  • 1/4 cup cocoa powder
  • 2/3 cup brown sugar
  • 1 pinch salt
  • 2/3 cup applesauce
  • 1 tbsp lemon juice

Instructions:

  1. Preheat the oven to 350°F.
  2. Wash the zucchini, remove the ends, and finely grate the zucchini. Place the grated zucchini in a clean kitchen towel and squeeze out the juice. Coarsely chop the chocolate.
  3. Place the chopped chocolate and margarine in a bowl and melt over a hot water bath. Stir until smooth and let cool slightly. Grease a loaf pan.
  4. Mix the flour with baking powder, cocoa powder, sugar, and salt. Gradually stir in the applesauce and lemon juice, then add the lukewarm chocolate mixture and fold it in. Mix the grated zucchini well into the batter. Pour the batter into the prepared pan and bake for about 50 minutes.
