Roasted pumpkin cubes are cooked with vegetables, onions, and chili powder to create a hearty, lightly spiced filling. Ingredients (serve 4):
2 cups pumpkin, peeled and cubed
1 bell pepper, sliced
1 small onion, diced
2 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
1/4 tsp smoked paprika
8 small tortillas, warmed
Salt and pepper to taste
Optional toppings: avocado slices, red cabbage, chopped cilantro, lime wedges, or salsa
Instructions:
In a large pan, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until soft.
Add the cubed pumpkin, chili powder, cumin, and smoked paprika. Cook, stirring occasionally, for 8-10 minutes until the pumpkin is tender.
Season with salt and pepper to taste.
Arrange the pumpkin mixture in warm tortillas and garnish with avocado, cilantro, or a squeeze of lime if desired.
