Pumpkin Tacos

Pumpkin tacos are a unique and flavorful twist on traditional tacos with plenty of vegetables. Roasted pumpkin cubes are cooked with vegetables, onions, and chili powder to create a hearty, lightly spiced filling. These tacos are served in warm tortillas and are perfect for a quick, satisfying meal with a seasonal touch.


Ingredients (serve 4):

  • 2 cups pumpkin, peeled and cubed
  • 1 bell pepper, sliced
  • 1 small onion, diced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp smoked paprika
  • 8 small tortillas, warmed
  • Salt and pepper to taste
  • Optional toppings: avocado slices, red cabbage, chopped cilantro, lime wedges, or salsa

Instructions:

  1. In a large pan, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until soft.
  2. Add the cubed pumpkin, chili powder, cumin, and smoked paprika. Cook, stirring occasionally, for 8-10 minutes until the pumpkin is tender.
  3. Season with salt and pepper to taste.
  4. Arrange the pumpkin mixture in warm tortillas and garnish with avocado, cilantro, or a squeeze of lime if desired.
