Red Cabbage Gratin

This red cabbage gratin is a bit unusual, but all the more delicious. Red cabbage doesn't just make a great side dish; this gratin works well as a main course too.


Ingredients (serve 4):

  • 1.75 lbs red cabbage
  • 1 tbsp sugar
  • 1 tbsp salt
  • 1/4 cup apple cider vinegar
  • 1 small onion
  • 1 apple
  • 1/2 cup red wine or grape juice
  • 1/2 cup heavy cream
  • 2 cups grated cheese
  • 4 tbsp breadcrumbs
  • Salt, pepper, and nutmeg to taste

Instructions:

  1. Remove the core from the red cabbage and cut it into thin strips.
  2. Add some salt and sugar, then knead the cabbage with your hands until it becomes a bit softer. Pour in the apple cider vinegar.
  3. Peel and finely dice the onion. Wash the apple, remove the core, and grate it finely. Sauté the onions and apple in a pot with some oil.
  4. Add the red cabbage, pour in the red wine and cream, and let everything simmer on low heat for about 15 minutes.
  5. Preheat the oven to 350°F.
  6. Combine the grated cheese and breadcrumbs and season with salt, pepper, and grated nutmeg. Spread the red cabbage in a greased casserole dish and top with the cheese-breadcrumb mixture. Bake for about 30 minutes and serve.
