Parsnip Fries
Parsnips often end up as a flavor booster in vegetable soup, but they also make fantastic healthy fries. Fry fans will become veggie lovers too.
Ingredients (serve 4):
- 2 lbs parsnips
- 3/4 cup olive oil
- 1 tbsp fresh, chopped parsley
- Salt and pepper to taste
Instructions:
- Preheat the oven to 350°F.
- Peel the parsnips and cut them into sticks.
- In a large bowl, toss the parsnip sticks with olive oil, salt, and any other desired seasonings.
- Line a baking sheet with parchment paper and spread the parsnip fries on it.
- Bake in the oven for about 40 minutes until crispy, and serve hot with parsley.
