Parsnip Fries

Parsnips often end up as a flavor booster in vegetable soup, but they also make fantastic healthy fries. Fry fans will become veggie lovers too.


Ingredients (serve 4):

  • 2 lbs parsnips
  • 3/4 cup olive oil
  • 1 tbsp fresh, chopped parsley
  • Salt and pepper to taste

Instructions:

  • Preheat the oven to 350°F.
  • Peel the parsnips and cut them into sticks.
  • In a large bowl, toss the parsnip sticks with olive oil, salt, and any other desired seasonings.
  • Line a baking sheet with parchment paper and spread the parsnip fries on it.
  • Bake in the oven for about 40 minutes until crispy, and serve hot with parsley.
