Zoodles are a vegetable-based alternative to pasta and have the advantage of not needing to be cooked.
Ingredients (serves 4):
1 bunch basil
1 garlic clove
1.8 oz Parmesan cheese
1/3 cup olive oil
3-4 zucchinis
1 1/2 cups cherry tomatoes
Salt and pepper to taste
Instructions:
Wash the basil, dry it, and pluck the leaves from the stems. Peel and finely chop the garlic. Grate the Parmesan cheese. Finely chop the basil leaves (reserving some for garnish) and mix them with the Parmesan, garlic, and olive oil. Season with salt and pepper. This pesto-like sauce will be coarser than when it's made in a blender but tastes just as good!
Wash, trim, and use a spiralizer to cut the zucchinis into "zoodles." Wash and halve the cherry tomatoes.
Toss the zucchini noodles, tomatoes, and pesto together and arrange on four plates. Garnish with the reserved basil leaves.
Tip: Zoodles can also be lightly cooked. If you prefer, you can sauté them briefly in a pan with a bit of olive oil, or even steam or microwave them for a minute or two, just to soften them slightly.
