Baked pasta can be made easily without pre-cooking the ingredients, saving time and energy.
Ingredients (serves 4):
1 onion
1 garlic clove
1 tbsp olive oil
2,5 cups crushed tomatoes
2/3 cup vegetable broth
1/2 cup heavy cream
1/2 jarred bell peppers
4 sun-dried tomatoes
1 cup crumbled feta cheese
1 cup shredded mozzarella
1 lb pasta (e.g., fusilli)
A handful of basil
Salt, pepper, and Italian herbs for seasoning
Instructions:
Peel and finely dice the onion and garlic. Grease a baking dish with olive oil.
Mix the pureed tomatoes with the vegetable broth, onion, garlic, Italian herbs, salt, pepper, and cream to create a sauce.
Drain the bell peppers, sun-dried tomatoes, and any other antipasti vegetables if using. Reserve 1 tbsp of the oil from the jarred vegetables. Cut everything into small pieces. Dice the feta cheese and slice the mozzarella.
Place the pasta, chickpeas, feta, sun-dried tomatoes, and vegetables in the baking dish. Pour the prepared tomato sauce over everything. Top with mozzarella slices and drizzle with the reserved oil.
Bake in the oven at 400°F for 25-30 minutes, then turn off the oven and let it sit for another 10 minutes.
Let the one-pot pasta cool slightly and sprinkle with fresh basil leaves before serving.
Tip: If desired, you can also add fresh cherry tomatoes or marinated artichoke hearts.
