One Pot French Onion Chicken Skillet

For this quick chicken dish, you only need one skillet to prepare all the ingredients, saving energy both in cooking and cleaning.


Ingredients (serves 4):

  • 2 tbsp butter
  • 1 chopped onion
  • 1 garlic clove, crushed
  • 1 lb boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 tbsp French onion soup mix
  • 2 tsp mustard
  • 2 tsp paprika
  • 3/4 cup rice
  • 2 cups water
  • 1 can (about 7 oz) mushrooms
  • 1 15-oz can  carrots and peas
  • 1/2 cup sour cream
  • Salt and pepper to taste

Instructions:

  1. Heat the butter in a skillet and add the onion and garlic. Cook while stirring until the onion is soft.
  2. Cut the chicken into 3/4-inch cubes and coat in flour.
  3. Add the chicken to the skillet with the onion mixture and cook while stirring for 5 minutes.
  4. Add the soup mix, mustard, paprika, rice, and water.
  5. Cover and simmer for 15 minutes, stirring occasionally.
  6. Just before serving, add the drained mushrooms, carrots and peas, and sour cream to the skillet. Heat through without boiling. Sprinkle with parsley.

Tip: Add a splash of white wine for extra flavor if desired. Enjoy!
