Couscous Salad

The great advantage of couscous is that it can be cooked simply by pouring hot water over it, thus saving precious electricity.


Ingredients (serves 4):

  • 1 cup couscous
  • 2 cups vegetable broth
  • 1 cucumber
  • 2 bell peppers
  • 2 tbsp parsley
  • Optional: raisins
  • 5 tbsp olive oil
  • 2 tbsp vinegar (e.g., white balsamic)
  • 1 tbsp tomato paste
  • Salt and pepper to taste

Instructions:

  1. Place the couscous in a heatproof bowl. Boil 2 cups of vegetable broth and pour over the couscous. Stir well and let it sit for ten minutes.
  2. Wash the cucumber and bell peppers. Core the bell peppers and dice both vegetables. Wash and finely chop the parsley.
  3. Once the couscous has absorbed the water, drain excess water if necessary.
  4. Add the diced vegetables and parsley to the couscous and mix well. Optionally, add 4 tbsp of raisins.
  5. Prepare a dressing by mixing olive oil, vinegar, tomato paste, salt, and pepper. Combine the dressing with the couscous salad.

Tip: This salad tastes great as a side dish or a main course. Enjoy!
