Couscous Salad
The great advantage of couscous is that it can be cooked simply by pouring hot water over it, thus saving precious electricity.
Ingredients (serves 4):
- 1 cup couscous
- 2 cups vegetable broth
- 1 cucumber
- 2 bell peppers
- 2 tbsp parsley
- Optional: raisins
- 5 tbsp olive oil
- 2 tbsp vinegar (e.g., white balsamic)
- 1 tbsp tomato paste
- Salt and pepper to taste
Instructions:
- Place the couscous in a heatproof bowl. Boil 2 cups of vegetable broth and pour over the couscous. Stir well and let it sit for ten minutes.
- Wash the cucumber and bell peppers. Core the bell peppers and dice both vegetables. Wash and finely chop the parsley.
- Once the couscous has absorbed the water, drain excess water if necessary.
- Add the diced vegetables and parsley to the couscous and mix well. Optionally, add 4 tbsp of raisins.
- Prepare a dressing by mixing olive oil, vinegar, tomato paste, salt, and pepper. Combine the dressing with the couscous salad.
Tip: This salad tastes great as a side dish or a main course. Enjoy!
