Carrot Tart Tartine

A savory twist on the classic French dessert, this upside-down tart features caramelized carrots infused with honey, balsamic vinegar, and fresh rosemary. With its glossy caramelized carrots, creamy goat cheese, and flaky pastry, this tarte tatin is a perfect blend of sweet and savory flavors—an elegant yet comforting dish.

Ingredients (for 4-6 servings):

  • 4-5 medium carrots, peeled and sliced lengthwise
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 tsp fresh rosemary, chopped
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 oz goat cheese, crumbled
  • 1 sheet puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions:

  1. Preheat oven to 400°F (200°C). In an ovenproof skillet, melt butter and olive oil over medium heat. Add honey, balsamic vinegar, rosemary, salt, and pepper, stirring until combined.
  2. Arrange the carrot slices in a single layer in the skillet and cook for 5-7 min. until they begin to caramelize. Remove from heat and sprinkle crumbled goat cheese over the carrots.
  3. Roll out the puff pastry slightly and place it over the carrots, tucking in the edges around the skillet. Brush the top with egg wash.
  4. Bake for 25-30 min. until the pastry is golden brown and puffed. Let cool for 5 min. before carefully inverting the tart onto a serving plate.
  5. Slice and serve warm, garnished with extra rosemary if desired.
