Carrot Tart Tartine
A savory twist on the classic French dessert, this upside-down tart features caramelized carrots infused with honey, balsamic vinegar, and fresh rosemary. With its glossy caramelized carrots, creamy goat cheese, and flaky pastry, this tarte tatin is a perfect blend of sweet and savory flavors—an elegant yet comforting dish.
Ingredients (for 4-6 servings):
- 4-5 medium carrots, peeled and sliced lengthwise
- 2 tbsp butter
- 1 tbsp olive oil
- 2 tbsp honey
- 1 tbsp balsamic vinegar
- 1 tsp fresh rosemary, chopped
- ½ tsp salt
- ¼ tsp black pepper
- 4 oz goat cheese, crumbled
- 1 sheet puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions:
- Preheat oven to 400°F (200°C). In an ovenproof skillet, melt butter and olive oil over medium heat. Add honey, balsamic vinegar, rosemary, salt, and pepper, stirring until combined.
- Arrange the carrot slices in a single layer in the skillet and cook for 5-7 min. until they begin to caramelize. Remove from heat and sprinkle crumbled goat cheese over the carrots.
- Roll out the puff pastry slightly and place it over the carrots, tucking in the edges around the skillet. Brush the top with egg wash.
- Bake for 25-30 min. until the pastry is golden brown and puffed. Let cool for 5 min. before carefully inverting the tart onto a serving plate.
- Slice and serve warm, garnished with extra rosemary if desired.
