Pesto Fried Eggs

Elevate your morning toast with this simple yet flavorful pesto fried eggs on toast. By cooking eggs in a swirl of vibrant pesto, you'll create a dish that’s rich, aromatic, and delightfully green. Topped with a sprinkle of Parmesan, it’s a breakfast that feels special without the fuss. 

Ingredients (for 1 serving):

  • 1 tbsp pesto
  • 1 egg
  • 1 slice of bread, toasted
  • 1 tbsp grated Parmesan
  • Pinch of salt and pepper

Instructions:

  1. Heat a nonstick skillet over medium heat and add the pesto, spreading it out evenly.
  2. Crack the egg into the skillet, letting it cook in the pesto. Season with salt and pepper.
  3. Once the egg whites are set and the yolk is still runny (or cooked to your preference), gently transfer the egg onto the toast.
  4. Sprinkle with grated Parmesan and serve immediately.
