Breakfast burritos are a versatile and satisfying option for busy mornings. Scrambled eggs, veggies, and cheese are wrapped in soft tortillas, creating a handheld meal that’s perfect for meal prep. This recipe is highly customizable, so you can use whatever ingredients you have on hand. These burritos can be heated up in the microwave, oven, or even the air fryer for stress-free mornings!

Ingredients (for 4 burritos):

  • 6 eggs, scrambled
  • 1 cup diced mixed vegetables (e.g., bell peppers, onions, spinach)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
  • 4 large flour tortillas
  • ½ cup cooked breakfast sausage or bacon bits (optional)
  • Salsa and sour cream for serving

Instructions:

  1. In a skillet, sauté vegetables until softened. Add cooked eggs and mix well.
  2. Warm tortillas and spoon the egg mixture onto each. Sprinkle with cheese and optional meat.
  3. Roll burritos tightly, folding in the sides as you go.
  4. Serve immediately or wrap in foil and refrigerate for up to 3 days (or freeze for longer).
