Savory Spinach Pancakes

Start your day with a healthy twist on traditional pancakes. These oatmeal pancakes are blended with oats, eggs, and fresh spinach to create a vibrant, nutrient-packed breakfast. Serve them warm with a dollop of Greek yogurt for a satisfying and wholesome meal. You can even freeze them an reheat them in the toaster to save even more time!

Ingredients (for 2 servings):

  • 1 cup rolled oats
  • 2 eggs
  • 1 cup fresh spinach
  • ¼ cup milk (dairy or non-dairy)
  • ¼ tsp salt
  • 1 tbsp olive oil
  • ¼ c Greek yogurt (for serving)

Instructions:

  1. In a blender, combine oats, eggs, spinach, milk, and salt. Blend until smooth.
  2. Heat olive oil in a nonstick skillet over medium heat. Pour in the batter to form small pancakes.
  3. Cook for 2-3 min. per side or until golden and cooked through.
  4. Serve warm with a dollop of Greek yogurt.
