Blueberry Cheesecake Crisp Bars

These blueberry cheesecake crumble bars combine a buttery streusel crust, creamy cheesecake filling, and a sweet-tart blueberry layer for the perfect dessert bar. Fresh blueberries burst with flavor between the rich, velvety cheesecake and the golden crumble topping. With their irresistible texture and balanced sweetness, these bars are perfect for spring gatherings or an afternoon treat. Not only are they delicious, these bars deliver all the flavors of a blueberry cheesecake with the convenience of snacking on the go!

Ingredients (for 12 bars):

For the Crust:

  • 1 ½ cups flour
  • ½ cup rolled oats
  • ½ cup sugar
  • ½ tsp cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, melted

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • ¼ cup sugar
  • 1 egg
  • ½ tsp vanilla extract

For the Blueberry Layer:

  • 1 ½ cups fresh blueberries
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon zest
  • 1 tbsp lemon juice

Instructions:

  1. Preheat oven to 350°F. Line an 8x8-inch baking pan with parchment paper.
  2. In a bowl, mix flour, oats, sugar, cinnamon, and salt. Stir in melted butter until crumbly. Press ? of the mixture into the pan for the crust.
  3. In another bowl, beat cream cheese, sugar, egg, and vanilla until smooth. Spread over the crust.
  4. In a small saucepan, cook blueberries, sugar, cornstarch, lemon zest, and juice over medium heat for 3-4 min., until slightly thickened. Spoon over the cheesecake layer.
  5. Sprinkle the remaining crumble mixture on top and bake for 35-40 min., until golden.
  6. Let cool completely before slicing into bars.
