Lemon Poppyseed Muffins

These bright and zesty muffins bring the perfect balance of citrusy tang and subtle crunch from poppy seeds. Moist, tender, and lightly sweetened, they stay fresh for days and pair beautifully with coffee or tea—an ideal make-ahead treat for a special brunch. Light, flavorful, and irresistibly soft, these muffins bring a sunny, citrusy touch to your Easter spread!

Ingredients (for 12 muffins):

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tbsp poppy seeds
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup buttermilk
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • Zest of 2 lemons
  • ¼ cup fresh lemon juice
  • 1 tsp vanilla extract

Instructions:

  1. In a large bowl, whisk together flour, sugar, poppy seeds, baking powder, baking soda, and salt.
  2. In another bowl, mix buttermilk, melted butter, eggs, lemon zest, lemon juice, and vanilla.
  3. Gradually add wet ingredients to dry, stirring until just combined. Refrigerate until ready to bake (up to 2days).
  4. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  5. Divide batter evenly among muffin cups, filling about ¾ full.
  6. Bake for 18-20 min. until golden and a toothpick inserted comes out clean.
  7. Let cool for 5 min. in the pan, then transfer to a wire rack.
