6 large eggs

  • 1/2 cup milk (any kind)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced ham
  • 1/4 cup finely chopped onion
  • Salt and pepper, to taste
  • Optional: chopped parsley or chives for garnish
  • Nonstick spray or oil (for greasing the muffin tin)
  • Instructions:

    1. Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with nonstick spray or oil.
    2. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
    3. Stir in the diced ham, shredded cheese, and chopped onion.
    4. Divide the mixture evenly among the 12 muffin cups, filling each about 3/4 full.
    5. Bake for 18–22 min., or until the centers are set and the tops are lightly golden.
    6. Let cool slightly before removing from the tin. Garnish with chopped herbs, if desired, and serve warm or at room temperature.
