6 large eggs
1/2 cup milk (any kind)
1/2 cup shredded cheddar cheese
1/2 cup diced ham
1/4 cup finely chopped onion
Salt and pepper, to taste
Optional: chopped parsley or chives for garnish
Nonstick spray or oil (for greasing the muffin tin)
Instructions:
- Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with nonstick spray or oil.
- In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Stir in the diced ham, shredded cheese, and chopped onion.
- Divide the mixture evenly among the 12 muffin cups, filling each about 3/4 full.
- Bake for 18–22 min., or until the centers are set and the tops are lightly golden.
- Let cool slightly before removing from the tin. Garnish with chopped herbs, if desired, and serve warm or at room temperature.
