1 English cucumber, thinly sliced

  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, chopped (or substitute chives or mint)
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • 12 slices of soft white or whole wheat sandwich bread, crusts removed
  • Optional: extra dill sprigs or thin cucumber ribbons for garnish
  • Instructions:

    1. In a bowl, mix the softened cream cheese, lemon juice, chopped dill, salt, and pepper until smooth and spreadable.
    2. Spread a generous layer of the cream cheese mixture on one side of each slice of bread.
    3. Layer cucumber slices evenly over half the slices, then top with the remaining bread, cream cheese side down.
    4. Press lightly to seal, then cut each sandwich into 2–4 small triangles or rectangles.
    5. Chill for 15–30 min. before serving for best texture. Garnish with extra dill or cucumber ribbons if desired.
