1 English cucumber, thinly sliced
8 oz cream cheese, softened
2 tbsp fresh dill, chopped (or substitute chives or mint)
1 tbsp lemon juice
Salt and pepper, to taste
12 slices of soft white or whole wheat sandwich bread, crusts removed
Optional: extra dill sprigs or thin cucumber ribbons for garnish
Instructions:
- In a bowl, mix the softened cream cheese, lemon juice, chopped dill, salt, and pepper until smooth and spreadable.
- Spread a generous layer of the cream cheese mixture on one side of each slice of bread.
- Layer cucumber slices evenly over half the slices, then top with the remaining bread, cream cheese side down.
- Press lightly to seal, then cut each sandwich into 2–4 small triangles or rectangles.
- Chill for 15–30 min. before serving for best texture. Garnish with extra dill or cucumber ribbons if desired.
